Turkey Cutlets with Quinoa

Step by Step

Prepare quinoa according to the package directions, omitting salt.

In a medium bowl, combine turkey breast mince, whisked egg, ground black pepper, and smoked paprika. Form small flat cutlet/ cutlets.

Heat canola oil in a medium nonstick frying pan over medium heat. Add formed cutlet/ cutlets into the pan and cook for 5 min on each side until brown.

Serve cooked quinoa in a bowl, add cooked cutlet/ cutlets, cucumber, sweet corn, and sprinkle with scallions.
